Chef Michael Weldon is loving his Chilli & Lime Grilled Pineapple with Nomikai Alcoholic Lemon Glaze
Ingredients
1 pineapple, peeled and cut into 8 strips
2tbs sugar
1 lime zest
1stp chilli flakes
Nomikai Glaze
1/2 cup Nomikai Alcoholic Lemon
1/2 sugar
1 lime leaf
1 red chilli, sliced thinly
Sea Salt
To serve
Whipped cream
Method
Heat a BBQ or griddle pan until smoking.
Dust the pineapple pieces in sugar, chilli flakes and lime zest.
Place in the bbq or griddle pan, cook until caramelized all over and the pineapple is cooled through.
In a small saucepan add the nomikai lemon, sugar and lime leaf. Cook down into a lightly golden syrup. Once thick remove from the heat, season with a pinch of salt and allow to cool.
Serve the pineapple drizzled with syrup and finished with extra lime zest.
