So Michael Weldon is cooking Crispy Beer Batter Fish Tacos

Chef Michael Weldon is loving Liquorland's Smithy's Premium Lager paired with his Crispy Beer Batter Fish Tacos

Ingredients

8 pieces of White Fish

1 cup plain flour, plus extra for dusting

1tsp baking powder

Smithy’s Premium Lager

 

Pineapple Salsa

½ pineapple, diced

1 red onion diced

1 cucumber, diced

1 jalapeno diced

¼ bunch coriander, sliced fine

1 lime

Sea salt

 

Crema

½ cup mayonnaise

½ cup sour cream

1 lime, juice

1tsp green chilli sauce(optional)

 

Sunflower oil for frying

 

To serve

White Cabbage, shaved

Flour or corn tortillas

Method

  1. Heat the oil to 180deg c.
  2. In a bowl mix the flour, baking powder and a pinch of salt. Slow pour in the smithies larger and whisk the mix into a batter consistence.
  3. Dust the fish in flour and then drop into the batter. Take from the batter and carefully lower into the oil. Cook until golden and crisp.
  4. In a bowl mix together the salsa ingredients and season to taste.
  5. In a bowl mix together the cream.
  6. Serve the tacos topped with shaves cabbage, the golden fish, pineapple salsa and finish with cream.
